Local chef tries to create the “gratest” grilled cheese

VANCOUVER (NEWS1130) – It’s a huge honour for a Vancouver chef.

Last week, Ned Bell took part in the second annual “Gratest” Grilled Cheese competition in Toronto and came in second.

He cooked up three different kinds of grilled cheese sandwiches for the judges.

“The ‘Simple’ was brie and cheddar from over on [Vancouver] Island. I did a ‘Spicy’ with two spicy cheeses from the Okanagan. And then I did a ‘Smoked’ with a really cool cheese — a wild smoked salmon, smoked cheddar — that was just outstanding,” notes Bell.

He says making a good grilled cheese is quite easy and it’s great for people of all ages. “Especially now with kids going back to school. They are a great meal any time of the day and they are really quick to prepare.”

If you’re wondering how to make the perfect grilled cheese, Bell has one tip that all chefs should follow.

“One of the biggest challenges with people is they don’t crisp up their bread enough. You really want your bread to be crusty and crunchy, so then you have this buttery, crunchy crust on the outside and this gooey, cheesy, melted awesomeness in the middle.”
